I will be honest, this feels like cheating on my desire to be a healthy eater.  Yes, this is absolutely a dessert you can tell from the sugar and butter but there is just so much fruit in it I claim it as breakfast too.  Usually when I make a dessert, like Cheesecake, I do not fool myself into thinking I can eat it for breakfast.  But this dangerous dish with its delicious fruit, spices, crunchy crust on top, this I allow myself to eat whenever.  This dish is a perfect combination of sweet and tart and in my mind perfect for any occasion at any time of day.  Oh did I mention that this is super easy to make too?

Chicken Pot Pie, that thing which comes frozen and you heat it up in the microwave, right?  Yes, that is how my mother made them, but I successfully made this wonderful creation from scratch.  Yes, it took many hours to make, but the results were well worth it.  The creamy filling was full of flavor and the crispy crust was a perfect topping.  We could not get enough of this wonderful chicken pot pie!

I made a cheesecake all by myself.  Let me just say it again, I made a cheesecake.  Who ever said I wasn’t a baker?  Apparently, it is my new calling!  For Valentine’s Day my wonderful husband cooked me up this fantastic feast .  In turn I made him a surprise cheesecake.

It is true, the way to a man’s heart is through his stomach!

Valentine’s Day

My husband can cook too!  He made me this fantastic dinner of steak salad, mashed potatoes, and spinach soup.

Winter Plants

Luckily we just survived SNOWPOCALYPSE!!!  So I thought I would take this opportunity to brag about our winter plants which are not just surviving but thriving.  Yes, all of our basil and dill died in the fall but so many of our plants are still producing for us.  It makes me so excited to plant again in the Spring.

Just as a reference point, this is what our windows looked like this past week:

But some how our Parsley is like a forest and the Oregano has been going strong for over 2 years.

This is a plethora of side dishes for dinner!  We have roasted sweet potatoes, roasted carrots, and garlic green beans.  All three of these are delicious side dishes and together they make a wonderful meal.  Enjoy them separately or all together!

Spaghetti Squash

The first time I had Spaghetti Squash, I thought it was this secret that nature had been keeping from me all these years.  It is so delicious and versatile.  Plus any vegetable that can transform in the oven is aces in my book.  Here I enjoyed it topped with spinach and leeks for a smashingly successful squash.
