Happy Saint Patrick’s Day!!  Don’t worry you still have time to make this classic Irish dish.  I wish there was some sort of mystic celtic cooking, but alas they just boil everything.  So in honor of my forebears, I give you corned beef, cabbage, and potatoes all boiled to salty delicious perfection.

And yes people have told me that this is the best corned they ever had.  And no it was not just my husband. (more…)

My goodness, my Guinness!!  This was the best Mac & Cheese I have ever had and I have eaten Mac and Cheese, believe me.  It is a far cry from the easy mac that provided me sustenance for most of college.  This dish is creamy and flavorful.  It is also a huge crowd pleaser.  If you for some reason you do not like traditional Irish fare, then this is a perfect substitute as you get ready to celebrate the drunkest holiday of the year.

I decided to experiment with this dish after making some delicious fondue which combines two of my favorite ingredients: beer and cheese.   The sauce seemed just about the correct consistency to make some decent Mac & Cheese.  After a little bit of tinkering with the ingredients and other Mac & Cheese recipes, I came up with this and it was fabulous.  I do need to warn you that this dishes is very good but not good for you so I highly recommend making for a crowd.  This way you can share the goodness and the calories.  So like all alcohol infused food, please enjoy responsibly.

I had not made ice cream since I was a child when the  process involved salt, ice, and a hand crank.  Homemade ice cream technology has come a long way since then.  Now a few girlfriends can make it in one afternoon and then sit back and relax before enjoying delicious delicious ice cream.  Luckily, one of my friends owns this fancy new ice cream technology and it comes as a Kitchen Aid attachment.  This is probably the only time I have been really jealous of a Kitchen Aid.

I can admit it.  I become a bit obsessed with cooking stew in the fall and winter.  If I made it once a week that would be fine with me and I doubt there would be complaints from my husband.  We both love coming home at the end of the day to a house smelling of stew cooking away in the crock-pot.  This particular stew recipe has the added benefit of containing one of my favorite cooking ingredients–Guinness.
