I grew up only knowing trail mix as GORP, which stands for Good Old Raisins and Peanutes, but actually consisted of those ingredients and pretzels and M&Ms.  While GORP will always hold a place near and dear to my heart, my trail mix tastes have really come a long way.

I have created a fool proof recipe for trail mixing which is as simple as 1-2-3.  Literally its 1 cup of chocolate, 2 cups of dried fruit, 3 cups of nuts.  You can mix and match ingredients as you like just keep the proportions the same.

I will be honest, this feels like cheating on my desire to be a healthy eater.  Yes, this is absolutely a dessert you can tell from the sugar and butter but there is just so much fruit in it I claim it as breakfast too.  Usually when I make a dessert, like Cheesecake, I do not fool myself into thinking I can eat it for breakfast.  But this dangerous dish with its delicious fruit, spices, crunchy crust on top, this I allow myself to eat whenever.  This dish is a perfect combination of sweet and tart and in my mind perfect for any occasion at any time of day.  Oh did I mention that this is super easy to make too?

I made a cheesecake all by myself.  Let me just say it again, I made a cheesecake.  Who ever said I wasn’t a baker?  Apparently, it is my new calling!  For Valentine’s Day my wonderful husband cooked me up this fantastic feast .  In turn I made him a surprise cheesecake.

It is true, the way to a man’s heart is through his stomach!

Who thought I would ever become a baker?

I have never been good at reading recipes–it might have something to do with having a touch of dyscalculia, which means I switch around numbers when I read them and is a real, not made-up, condition for which I have never been official diagnosed.  But this inability to follow recipes has impaired my baking skills.  Once I made meatloaf with at least double the bread crumbs because of this lack of reading and my parents dubbed it meat stuffing.  That mostly summarizes my baking experiences even if you do not count meatloaf as baking.  But lately my methods have been to try out this baking thing because things cannot go too wrong if its full of sugar and flour.  Within about two weeks I made two batches of zucchini flaxseed muffins and it turned out to be fabulous. I had not made ice cream since I was a child when the  process involved salt, ice, and a hand crank.  Homemade ice cream technology has come a long way since then.  Now a few girlfriends can make it in one afternoon and then sit back and relax before enjoying delicious delicious ice cream.  Luckily, one of my friends owns this fancy new ice cream technology and it comes as a Kitchen Aid attachment.  This is probably the only time I have been really jealous of a Kitchen Aid.

Banana Bliss

Best dessert ever!!!  You are not looking at ice cream, you are not even looking at custard, you are staring at bananas and a splash of milk.  But your tongue might think you are eating one of the other things mentioned.  You would not believe how awesome of an ice cream substitute this is.  It is so easy to make and I can eat it every night and not feel guilty at all.
