Winter Plants

Luckily we just survived SNOWPOCALYPSE!!!  So I thought I would take this opportunity to brag about our winter plants which are not just surviving but thriving.  Yes, all of our basil and dill died in the fall but so many of our plants are still producing for us.  It makes me so excited to plant again in the Spring.

Just as a reference point, this is what our windows looked like this past week:

But some how our Parsley is like a forest and the Oregano has been going strong for over 2 years.

This dish is amazing and it has so many of my favorite ingredients like feta, olives, and peppers, just to name a few.  Also, it contains one of my new pasta obsessions which is orzo.  For years, I was in love with couscous but now orzo is my small pasta of choice.  Orzo looks like rice but it is pasta and cooks quicker than you can say OPA!

Balsamic Blast

This salad is awesome, mostly because of the balsamic onions you see above.  The salad is very simple because it just involves sauteing onions in balsamic vinegar until the vinegar reduces.  Then toss in some chopped peppers just so they get a little heat.  Add this to lettuce and tomato and sprinkle with some mozzarella cheese.  Then enjoy this warm salad for dinner with some red wine.

Just Beet It

Finally, a beet for me!  I have never been a beet person.  I often say no matter how you cook them they taste like dirt, but finally I prepared them in a way that I love.  The secret is boiling and roasting them.  Then just eat them in a salad with feta, sweet dressing, and arugula.  This salad dish might even make you president some day. I love when I can trick salad into tasting like desert!  I had no idea that you could put fruit into salads until my wonderful roommate from Washington  taught me to put apples in spinach salad.  This salad has a great mix of sweet and tart flavors that really make it feel like you are eating anything but a salad. Totally Tuna

I recently learned that you could add crasins to tuna.  This should not have been that shocking since I have been adding grapes to tuna for years, but it did shock me.  So I had to make it, which was perfect since we also had carrots, celery, green pepper, and onions from the CSA.  This tuna salad was awesome.  (more…)
