Chicken Pot Pie, that thing which comes frozen and you heat it up in the microwave, right?  Yes, that is how my mother made them, but I successfully made this wonderful creation from scratch.  Yes, it took many hours to make, but the results were well worth it.  The creamy filling was full of flavor and the crispy crust was a perfect topping.  We could not get enough of this wonderful chicken pot pie!

This roasted squash soup is amazing.  It is perfect way to warm up on a cold winter day.  We saved all of the squashes we received from our CSA during the fall and then made this wonderful soup.  It is so rich and filling and freezes wonderfully for enjoying it later.

Homemade Chicken Broth

Homemade Chicken Broth is the greatest thing ever.  We keep jars of it in the freezer and add it to soups, risotto, or any other dish that seems worthy.  I am not going to show many pictures because it is not a very appetizing process but the results are well worth it.

Basically anytime I roast a chicken, I save the carcasses by putting it in a zip lock bag and sticking it in the freezer.  I also always save the chicken neck or any other innards.  Once I have a lot of frozen parts, I put them all in a large pot and cover it with water.  I bring it to a boil and then let it simmer for a few hours.  I usually add 1/2-1 tsp of salt for every quart of water I use.

After it is sufficiently simmered, I strain the broth using a colander.  Then I pour it into jars and freeze it for latter.  If you wanted to be super healthy, you could put it in the fridge over night and then skim the fat off the top in morning.

This is a wonderful addition to any dish and actually very easy to make!
