Homemade Chicken Broth

Homemade Chicken Broth is the greatest thing ever.  We keep jars of it in the freezer and add it to soups, risotto, or any other dish that seems worthy.  I am not going to show many pictures because it is not a very appetizing process but the results are well worth it.

Basically anytime I roast a chicken, I save the carcasses by putting it in a zip lock bag and sticking it in the freezer.  I also always save the chicken neck or any other innards.  Once I have a lot of frozen parts, I put them all in a large pot and cover it with water.  I bring it to a boil and then let it simmer for a few hours.  I usually add 1/2-1 tsp of salt for every quart of water I use.

After it is sufficiently simmered, I strain the broth using a colander.  Then I pour it into jars and freeze it for latter.  If you wanted to be super healthy, you could put it in the fridge over night and then skim the fat off the top in morning.

This is a wonderful addition to any dish and actually very easy to make!
