Do you ever open your fridge and say what should I do with all of these veggies?

Well a good fried rice is almost always the correct answer.  You can hide almost any vegetable in there and it is a great way to clear out anything extra you have lying around.

This is actually a dish my mother taught me to make as a child.  Back then the main ingredients consisted of frozen “stir fry vegetables” with some canned water chestnuts and dried crunchy lo mien noodles sprinkled on top.  It was delicious then and even better now with fresh ingredients.  There are many ways to whip up this dish but I try to make mine low on greasiness and high on flavor. I made a cheesecake all by myself.  Let me just say it again, I made a cheesecake.  Who ever said I wasn’t a baker?  Apparently, it is my new calling!  For Valentine’s Day my wonderful husband cooked me up this fantastic feast .  In turn I made him a surprise cheesecake.

Okay, you got me.  This is just an egg sandwich, but it is not any egg sandwich.  I am using this entry to brag about and explain our wonderful CSA, Cedar Valley Sustainable Farm.  Besides my husband’s homemade bread, the other ingredients come from Cedar Valley Sustainable Farm.  This family farm has been providing us with meat and eggs for almost two years and we could not be happier.  We pay for 3 or 6 months at a time and once a month we get a bushel of meat.  That is just my nickname for it, but it is really a freezer bag full and ranges from chicken, pork chops, bacon, steak, burgers, italian sausage, and the sausage patties pictured here.  We also get eggs!  I cannot express how wonderful this meat is.  At least half a dozen of my friends have signed up with Cedar Valley Sustainable Farm and are very happy customers.  You should check them out too!

Also, if you are interested in finding your own CSA, check out this website: http://www.localharvest.org/csa/

The breakfast of champions is a perfect way to start your day.  We never worry about the greens from the CSA piling up because it just means we get to eat this for breakfast.  While any greens will do, I love the way this sautéed rainbow swiss chard goes with poached eggs.  I firmly believe a poached egg belongs on a bed of greens so please enjoy a weekend brunch with this one.
